cake mix cookies: a funfetti birthday treat


Am I the only one who still gets excited over funfetti cake mix/frosting? I flipping love that stuff. Mostly the frosting. There's something about the little chippity chips they put in there.It seems that Pillsbury no longer makes the frosting with the chips in it. However, to my delight, Trav found that Betty Crocker makes a rainbow chip frosting that is completely acceptable in comparison.

This weekend, I had the need for a birthday treat, and I was looking for something a little less traditional than the usual cupcakes. I found a recipe for cookies made from a cake mix, and the rest is sandwich history. They were fast easy, and fabulous. Here's the recipe in case you ever find yourself wanting a funfetti treat!

1 box cake mix
1/2 cup butter or margarine, softened
1 teaspoon vanilla
2 eggs   

Heat oven to 350°F. In large bowl, beat cake mix, butter, vanilla and eggs with electric mixer on medium speed until smooth, or mix with spoon.

Onto ungreased cookie sheet, drop dough by slightly less than tablespoonfuls 2 inches apart.

Bake cookies 10 to 12 minutes or until edges are set (centers will be soft). Cool 1 minute; remove from cookie sheet to cooling rack.

I LOVE me a good funfetti cake, and cookies are even better. BUT...I just thought I would share and even MORE amazing way to enjoy cake mix cookies...try this (the lemon one's are killer, but any flavor is great!)
1 package of softened cream cheese
1 stick of softened butter
1 egg
mix that with the cake mix, bake @ 350 for at 10-15 min. jest depending on your oven and how chewy you like me!!!

Did you not know that funfetti cake with rainbow chip frosting is my fave? Haven't tried it in cookie form yet though, will have to try that. I have made my share of the red velvet and cream cheese variety though and THOSE are good.

Only cookies I ever make! Follow the same recipe as above, but add choc. Chips, nuts...whatever! They always turn out soft and rich!

I made these last year for my daughter's birthday treat for school! They were a hit and so easy! I used the recipe off of the box which was slightly different than yours.

I found a recipe called Whippersnappers that is similar to this.

1 box cake mix
2 cups Cool Whip
1 egg

Mix it all together and bake at 350 for 10 minutes.

My family's fav!

Yes yes yes. For as long as I can remember funfetti has been my birthday cake. Just a tradition. Now I am a personal baker, but we all know that box cakes are good, especially the funfetti! This is amazing. Cake cookies. And I love cookie sandwiches! Thanks for sharing!!

I can't believe this. I literally still ask for "the white frosting with little colored bits" for my birthday cake every year. I thought I was the only one! Purely awesome.

My mother -in -law made these. After she passed I simply lost the recipe and now you have given it back to me. There are so many variations for this mixture. My mom in law used to add pecans and almond flavoring..they were delicious.
