Red Velvet Cake Recipe

I have always wanted to bake a Red Velvet cake from scratch. I've just always been attracted to it. Maybe because it's bright red, but mostly because it's sugar. I've already mentioned that I finally baked the cake this weekend. I thought I would share my experience in case any one out there is interested in experiencing the same red baking bliss. I found the delicious Red Velvet recipe and instructions from Pinch my Salt, which is an awesome food blog. The thing I was most surprised about was the amount of food coloring you have to use. The recipe calls for 2 ounces!! This cake is definitely not all natural. I ended up using 3 bottles (about an ounce and 1/2) which seemed to make it pretty red. 

I made the cake without my hubby knowing the day before his birthday, so I had to freeze it. Apparently this is standard cake practice and helps to keep it moist. (I know nothing about cakes.) Frosting this baby was a nightmare. ALL THOSE LITTLE RED CRUMBS! I frosted a "top coat" and then put it in the fridge before adding a second layer which seemed to help. Also, I need to add a lovely cake stand to my list of things I must have in life. I had to get creative with this glass serving dish.

It turned out beautiful! I love red velvet cake! It's got everything good about cake in it! The last cake I made from scratch my husband said looked like the cake the fairies made for Sleeping Beauty, when they weren't using their magic. Sigh. Oh well.

The bleeding armadillo was fantastic! As for Baby E's outfit, I love the polka dot tie & bow tie best & the oxfords ofcourse. Suspenders would be great if you can hunt them down...perhaps I should bring his bday gift over early incase he wants to wear part of it in his pics?
